Ic cream cake recipe







Ingredients:


  • 2 cups chocolate cookie crumbs (from about 20 chocolate sandwich cookies)
  • 1/4 cup unsalted butter, melted

For the Ice Cream Layer:

  • 1.5 quarts of your favorite ice cream, softened (choose any flavor you like)

For the Whipped Cream Layer:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Optional Toppings:

  • Chocolate sauce, caramel sauce, crushed nuts, sprinkles, chocolate chips, etc.





Instructions:

  1. Prepare the Cake Base:

    • In a food processor or by placing the cookies in a plastic bag and crushing them with a rolling pin, crush the chocolate sandwich cookies into fine crumbs.
    • In a bowl, mix the cookie crumbs and melted butter until well combined.
    • Press the mixture into the bottom of a 9-inch springform pan to create the cake base. You can also use a regular cake pan lined with parchment paper for easy removal.
  2. Add the Ice Cream Layer:

    • Spread the softened ice cream evenly over the cookie crust in the pan.
    • Smooth the surface using a spatula to create an even layer.
    • Place the pan in the freezer and let the ice cream layer set for at least 2 hours, or until it's firm.
  3. Whipped Cream Layer:

    • In a mixing bowl, whip the heavy whipping cream, powdered sugar, and vanilla extract together until soft peaks form. Be careful not to overwhip.
    • Spread the whipped cream over the frozen ice cream layer. You can use a spatula to create decorative swirls on top.
  4. Final Assembly:

    • If you're using toppings like chocolate sauce, caramel sauce, nuts, or chocolate chips, drizzle or sprinkle them over the whipped cream layer.
  5. Final Freeze:

    • Place the cake back in the freezer and let it freeze for several hours, preferably overnight, to ensure that all layers are completely set.
  6. Serving:

    • Before serving, remove the cake from the freezer and let it sit at room temperature for a few minutes to make it easier to slice.
    • Use a sharp knife dipped in warm water to slice through the layers cleanly.
